C&rsquo;est l&rsquo;un des retours que nous avons eus apr\u00e8s notre atelier Food Futures la semaine derni\u00e8re \u00e0 Laax sur une alimentation durable, alors que nous avions choisi de cuisiner une version v\u00e9gane du pain perdu fran\u00e7ais, \u00e0 base de pain rassis, comme example de recette anti gaspillage. Dans cet atelier, nous commen\u00e7ons en g\u00e9n\u00e9ral par regarder quelques faits et chiffres sur la production et la consommation globale de nourriture: saviez-vous que le syst\u00e8me alimentaire mondial est le plus grand contributeur au changement climatique, \u00e0 l&rsquo;origine d&rsquo;un tiers des \u00e9missions mondiales de gaz \u00e0 effet de serre ? Nous remettons ensuite en question nos choix alimentaires et r\u00e9fl\u00e9chissons \u00e0 des solutions et des actions durables pour relever les d\u00e9fis alimentaires auxquels nous sommes confront\u00e9s aujourd&rsquo;hui. Parmi ces solutions, la r\u00e9duction du gaspillage alimentaire est essentielle. Selon les Nations unies[1], pr\u00e8s d&rsquo;un milliard de tonnes de nourriture &#8211; soit 17 % de l&rsquo;ensemble des denr\u00e9es alimentaires disponibles pour les consommateurs dans le monde &#8211; sont jet\u00e9es \u00e0 la poubelle chaque ann\u00e9e. La production, le transport et l&rsquo;\u00e9limination de cette nourriture pourrissent et contribuent \u00e0 plus de 8 % des \u00e9missions mondiales de gaz \u00e0 effet de serre. Si le gaspillage alimentaire \u00e9tait un pays, il serait le troisi\u00e8me pays \u00e9metteur au monde. La bonne nouvelle, c&rsquo;est qu&rsquo;en tant que consommateurs, nous pouvons jouer un r\u00f4le dans la r\u00e9duction des \u00e9missions de gaz \u00e0 effet de serre li\u00e9es \u00e0 notre syst\u00e8me alimentaire en commen\u00e7ant par acheter moins et en r\u00e9duisant (en \u00e9liminant ?) nos d\u00e9chets alimentaires. C&rsquo;est pourquoi nos ateliers \u00ab Food Futures \u00bb impliquent toujours la pr\u00e9paration pratique de recettes alimentaires. Pour cette occasion, nous avons m\u00eame cuisin\u00e9 un repas complet ensemble. Quoi de plus satisfaisant que de pouvoir mesurer, dans sa propre cuisine, son impact sur les solutions au gaspillage alimentaire et la r\u00e9duction des \u00e9missions de CO2 ?<\/p>\n<p>Une br\u00e8ve histoire du pain perdu<\/p>\n<p>L&rsquo;histoire du pain perdu remonte \u00e0 l&rsquo;\u00e9poque romaine, o\u00f9 ce plat \u00e9tait d\u00e9j\u00e0 consomm\u00e9 pour \u00e9viter de gaspiller du pain rassis. Au fil du temps, la recette s&rsquo;est r\u00e9pandue en Europe et a \u00e9volu\u00e9, donnant lieu \u00e0 diff\u00e9rentes variantes selon les pays et les \u00e9poques, jusqu&rsquo;\u00e0 \u00eatre propos\u00e9e dans les restaurants gastronomiques o\u00f9 les chefs r\u00e9inventent sans cesse la recette. La recette de base consiste \u00e0 faire tremper du pain rassis dans du lait, des \u0153ufs et du sucre, puis \u00e0 le faire frire et \u00e0 le servir avec du sucre, des \u00e9pices, des fruits ou de la confiture. Bien que le pain perdu soit appel\u00e9 French toast, il n&rsquo;existe pas qu&rsquo;en France. La recette anglaise ressemble beaucoup \u00e0 la version fran\u00e7aise : le pain est tremp\u00e9 dans un m\u00e9lange de lait, d&rsquo;\u0153ufs et de sucre, puis frit dans du beurre. Toutefois, les Anglais ont l&rsquo;habitude d&rsquo;ajouter de la cannelle et de la muscade pour rehausser la saveur du plat. Le pain perdu est souvent servi au petit-d\u00e9jeuner, accompagn\u00e9 de sirop d&rsquo;\u00e9rable, de fruits ou de bacon. En Espagne, le pain perdu est connu sous le nom de torrijas. Les torrijas sont traditionnellement pr\u00e9par\u00e9es pendant la Semaine sainte, p\u00e9riode de je\u00fbne pour les chr\u00e9tiens. La recette espagnole diff\u00e8re l\u00e9g\u00e8rement des autres versions europ\u00e9ennes. Le pain rassis est tremp\u00e9 dans du lait ou du vin doux, puis dans des \u0153ufs battus, avant d&rsquo;\u00eatre frit dans de l&rsquo;huile. Les torrijas sont ensuite saupoudr\u00e9es de sucre et de cannelle, ce qui leur donne un go\u00fbt sucr\u00e9 et \u00e9pic\u00e9 unique. En Allemagne, il est appel\u00e9 Arme Ritter, ce qui signifie \u00ab pauvre chevalier \u00bb, et d\u00e9signe un repas qui peut \u00eatre pr\u00e9par\u00e9 avec des moyens financiers limit\u00e9s et des ingr\u00e9dients peu co\u00fbteux. Au Portugal, le pain perdu est un plat traditionnel de No\u00ebl appel\u00e9 rabanadas. Contrairement aux Fran\u00e7ais qui consid\u00e9raient que ce pain \u00e9tait, s&rsquo;il n&rsquo;\u00e9tait pas cuisin\u00e9, perdu (\u00ab lost \u00bb), la langue n\u00e9erlandaise semble avoir une vision plus positive puisque le pain perdu est appel\u00e9 gewonnen brood (\u00ab pain gagn\u00e9 \u00bb, puisqu&rsquo;il est r\u00e9cup\u00e9r\u00e9), et c&rsquo;est sous ce nom qu&rsquo;on le trouve en Belgique ou wentelteefjes aux Pays-Bas.<\/p>\n<p>Les vieilles recettes sont-elles la nouvelle arme pour lutter contre le gaspillage alimentaire ?<\/p>\n<p>A l&rsquo;origine un moyen d&rsquo;\u00e9viter de gaspiller du pain rassis, le pain perdu est, du moins en France, un dessert qui est d\u00e9finitivement devenu un classique et que l&rsquo;on retrouve m\u00eame aujourd&rsquo;hui sur la carte de certains restaurants gastronomiques. Facile \u00e0 r\u00e9aliser, d\u00e9licieux et \u00e0 la mode, il semble qu&rsquo;il pourrait nous aider \u00e0 changer notre vision du gaspillage alimentaire. Et merci aux N\u00e9erlandais, qui, rien qu&rsquo;avec le nom positif qu&rsquo;ils donnent au pain perdu, sont d\u00e9finitivement en train de changer notre fa\u00e7on de voir les choses !<\/p>\n<p>Quelle est, selon vous, la meilleure recette pour \u00e9viter le gaspillage alimentaire ?
